Shadow blossom – 100g

Shadow Blossom is the result of a mutual admiration between cheesemaker Albert Kraus (of our ever popular Alp Blossom fame), and aMichelin starred restaurant Schattbuch. After a lot of talking shop together over a few dinners, this completely new creation came about. Starting as a traditional Alpine semi-hard cheese, it has a pleasantly soft and crunchy texture with a, creamy and buttery taste. The rind is then coated with six different pepper varieties – Wild Madagascar, Long, Tailed, Kampot, Pink Berries and Cardamom giving the cheese a kick and a complex spice. Made with the unpasteurised milk from 2 farms in the Allgau region of Bavaria, German.
