Chego – 100g

From Ribblesdale Cheese, first made in 2019 by the original cheesemaker, Iona who was looking to make a new sheeps milk cheese using Yorkshire milk and came up with the idea of making a Manchego style cheese (as manchego is probably one of the best known and bestselling sheeps milk cheeses in the world).  She bought the moulds from Spain and matures the cheese for 4-6 months, we love it and it’s great to have a British and vegetarian alternative.  Iona sold the business a few years later and it is now made in Lancashire (but still using Yorkshire sheeps milk).  It is complex, rich and tangy.  Made with pasteurised milk and vegetarian rennet.
