Provolone is a spun paste Italian cheese made from cow’s milk whose origins lie in Southern Italy. Today, the major production of Provolone takes place in Po valley region, particularly Lombardy and Veneto. Provolone cheese is also classified into two forms, Dolce and Picante. This particular cheese is a Dolce (sweet) version but at 4 months maturation, slightly more mature than the usual 2-3 month old Dolce and with a hint of the strong, spicy flavour of the Picante. Made with pasteurised milk and traditional rennet.
