This is our current favourite sparkling wine. Nestled in the scenic Penedès region of Catalonia, Salat Organic Cava is a sparkling wine that beautifully embodies the essence of its terroir. This coastal area, with the majestic Pyrenees to the north and the cooling embrace of the Mediterranean, creates the perfect conditions for growing the traditional Catalan grape varieties: Macabeo, Xarello, and Parellada.

With roots tracing back to 1920, the Masachs family has a storied history in winemaking. From humble beginnings with Josep Masachs Llorach producing still wines, the estate has evolved through generations. Today, under the visionary guidance of Joan Masachs and Alex Ruíz Masachs, Salat reflects a commitment to innovation and environmental responsibility while honouring its heritage.

Crafted using the traditional method, Salat undergoes a second fermentation in the bottle and is aged for an impressive 14 months on fine lees. This meticulous process yields a sparkling wine with an exquisite balance of flavours. On the nose, you’ll encounter enticing aromas of ripe fruit complemented by hints of freshly baked bread, while expressive citrus notes dance gracefully on the palate. The creamy mouthfeel adds to the luxurious experience, and the superb balance of acidity and fruit intensity ensures a long, lively finish that invites you back for more.
