A sea water-washed rind Italian cheese named after Val Taleggio (an Alpine valley in the Lombardy region of Italy) The cheese has a strong aroma, but its flavour is comparatively mild with an unusual fruity, yeasty tang. Its 10th century The production takes place every autumn and winter when the cows are “tired” the cheeses are matured for around 6 – 10 weeks in the caves of Val Taleggio. It is believed that the unique flora present in the caves is what gives the cheese its distinctive pink/green rind. Made with traditional rennet and unpasteurised milk.
