Famous squeaky cheese from Cyprus, made with a mixture of sheep and goat (and occasionally cow’s) milk, halloumi is famed for its high melting point. The cheese is semi hard, brined and often flavoured with a few mint leaves. Made with traditional rennet and pasteurised milk.
