Emmental can be many things. In the USA it is often known simply as Swiss Cheese and is often a rubbery, bland, everyday cheese with a low melting point. This Emmental is very different! This smooth full-flavoured cheese is from a small dairy in Hopferau in Bavaria, Germany. The cheese has been matured for 6 months to develop a rich, sweetly fruity, flavour. Made with unpasteurised milk and traditional rennet.
