A winter treat! A superb seasonal delicacy from the Massif du Mont D’Or in France close to the Swiss border. The cheese is produced from winter milk and only generally available from October – February. AOC regulations (Appellation d’origine controlee) require the cheese to be produced by cattle grazing at 700m or higher. The cheese is wrapped in spruce bark which lends it a wonderful aroma and taste and should not be removed even when serving. Made with unpasteurised milk and traditional rennet.
