Made by mother and son, Silke and Tom Cropp, just outside Belturbet, Co. Cavan.
The folk at Corleggy cheese smoke this themselves, giving it an intense smoked flavour and dryness that you don’t usually get with a lot of smoked cheese. Made with unpasteurised milk and vegetarian rennet.
