Probably the best cheese in the world! This cheese, (which we selected as the best on offer) is from a small mountain cooperative between Moderna and Bologna and matured for 24 months. Parmigiano is generally seen as a cheese for grating in this country, but finer versions are served as a table cheese in Italy and this is certainly one of the finer versions, having won several gold medals. The co-operative, Caseificio Fior di Latte, is situated in the beautiful mountain area of the Parmesan DOP region surrounded by lush green meadows, where the conditions are perfect for milk production. The dairy is a cooperative of over 100 small farms that produce small quantities of excellent milk destined for cheese production. You may enjoy this cheese grated over pasta or salad dishes but we would urge you to try it on your cheese board or on its own with some aged balsamic vinegar.
