Norfolk Dapple 100g
Ferndale farm in Little Barningham, North Norfolk, Dapple is an old fashioned unpasteurised, clothbound, hard cows’ milk cheese with a dappled rind. In the words of Arthur Betts, the Cheesemaker; “in the colours of the Barn Owl’s wing feathers”. The cheese is produced from the milk of Fresian cows who graze the clay grasslands around an 11th-century priory, it has a smooth texture and hint of nuttiness and a rich flavour. Made with unpasteurised milk and vegetarian rennet.
