Dolcelatte is a modern blue cheese from Italy produced on a large scale by the Galbani family who developed the cheese as a milder, sweeter version of gorgonzola for the British market – we were not buying enough gorgonzola! Dolcelatte melts beautifully, try stirring some into some freshly cooked pasta… Made with vegetarian rennet and pasteurised milk.
